Sincerely Pasta

Maria had been very sick for several years. After several visits to the hospital and many years of constant gastrointestinal problems, we decided to look for a different alternative and we went to see a naturopath. We were very lucky to find Dr. Drew Sinatra, a brilliant doctor. Drew suggested an elimination diet and a couple of weeks later we found out that Maria is sensitive to gluten. I decided to be supportive and we both started our gluten free lifestyle. Our lives completely changed. Maria's health dramatically improved. We became very interested in learning about food, how it is made, where it comes from. We became so passionate that we decided to dedicate our lives to food. One of the things that we missed the most was good pasta. It became a challenge to be able to make fresh pasta with no wheat. After several trials and several months of work we came up with our first version. We have improved our recipe several times after that, until we found something that we are absolutely crazy about.
