Although the alertness enhancing effects of coffee was already known by the 13th century it was around this time that the Arabs discovered the effect of applying heat to beans. After heating the beans they ground them and boiled them in water, releasing the sugars that caramelized in the heat as well as the captivating aroma we love today.
